Here are just a few delicous recipes that I have cooked over and over. I hope you will enjoy them.
Shrimp Fritters
1 c. shrimp 1 c. cooked rice 1 t. sugar 1/4 c. milk 1/2 c. flour 1/2 c. chopped green onions 2 t. baking powder 1 egg |
Chop raw shrimp. Mix all of the ingredients together. Roll small portions in cracker crumbs. Fry in a non-stick skillet, in about 1/2 inch of cooking oil until golden brown. |
Broccoli Cornbread
1 16oz. cottage cheese 1 large onion, chopped 1 box chopped broccoli 1 stick butter 4 eggs 2 boxes jiffy cornbread season to taste |
Thaw broccoli and drain. Melt butter. Mix all of the ingredients together. Bake in a 9x13 greased pan at 425 degrees for 30 minutes or until browned. |
7-layer Tex-mex Dip
2-10 1/2 oz. cans bean dip 8 oz. jar guacomolie (seasoned) 8 oz. sour cream 1/2 c. mayonaisse 1 pkg. taco seasoning 3 1/2oz. can black olives, chopped 3 tomatoes 1 c. green onions 16 oz. shredded cheddar |
Mix sour cream, taco seasoning, and mayonaisse. Bean dip is the first layer, then sour cream mixture. Layer the remaining ingredients on top. Serve with corn tortillas |
Shrimp Dip
1-8oz. cream cheese 1/2 c. green onions 1 can, shrimp 1/2 c. miracle whip creole seasoning |
Allow cream cheese to soften. Drain shrimp thoroughly. Mix al lingredients together and chill. Serve with crackers. |
